A built-in range, wall oven or hood is half appliance and half installation, and from the front the two fail in ways that look identical. An oven that will not hold a setpoint is as likely to be a door sealing at three corners as a thermostat; a hood that seems weak is more often two extra elbows of duct than a tired motor. So the appliance is measured where it stands, and the estimate is written before a part is named.

Range and rangetop
Burners that will not light, a griddle that runs cold at one end, an oven that reads one temperature and holds another. Sealed burners, igniters, spark modules, valves and the electric oven side of a dual fuel range.

Convection steam oven
A steam oven is a water system with an oven built around it, and its faults run in a fixed order — passages first, sensing second, the generator last. Caught early it is a clean; caught late it is a part.

Single and double built-in ovens, plus the warming drawer and speed oven that usually share the same cabinet run. Sensors, elements, hinges, seals and the convection fan that moves the heat.

Cooktop and induction
Sealed gas burners that spark without lighting, induction zones that cut out under a pan, electric elements that never reach temperature. The cooktop is the appliance a coastal kitchen is hardest on.

Hoods and ventilation
Wall hoods, island hoods, downdrafts and the in-line or remote blowers that serve them. Salt air kills blower bearings on the coast, and a tight house starves the hood no matter how big the motor is.

The most heavily cycled appliance in the kitchen, and the one with the tightest tolerances. Grinders, brew units, pumps, heaters and milk circuits, diagnosed in the cabinet the unit was built into.

Build era decides most of it. A kitchen cut in the 1920s was drawn around a 30-inch domestic range and no ventilation beyond a window, so a modern installation there is a negotiation with the structure — opening width, floor deflection under a range that has to be carried in on a board, a duct route through masonry, a circuit the panel was never asked for. A kitchen built in the last twenty years has none of those problems and one the old ones never had: an envelope tight enough that a hood cannot exhaust air the house will not let back in. Fitting a 48-inch range to an old St. Augustine kitchen
Width is the least of it. Floor level, load, clearances, the electrical supply and a duct route that does not exist yet all decide whether a pro range works in an old house or merely fits in it.

What to check before you call us
Some of these end the problem without a visit. The rest turn a vague complaint into a specific one, which is the difference between a diagnosis and a guess. Plus the three things not to touch.

Salt air and the hood blower
In 32084 and 32080 the ventilation system fails on a schedule you can hear. Salt is hygroscopic, blower housings never dry out, and an unbalanced wheel and a dry bearing accelerate each other.
Diagnose, quote in writing, then repair
No work begins before you have a number on paper.
A visit starts with the flat $129 diagnostic. If the repair goes ahead, that fee comes off the bill. If it does not, you still leave with a written account of what is wrong and what the part costs.
EPA Section 608 certified technicians handle anything involving refrigerant. Section 608 is a federal technician credential — it says the person doing the work is qualified to recover and charge refrigerant legally. It is not, and is never presented as, an endorsement by any manufacturer.
